Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/3 cup unsalted butter, melted
For the filling:
- 3 (8 oz) packages cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup amaretto liqueur
- 1 tsp almond extract
- 1 tsp vanilla extract
- 2 tbsp all-purpose flour
- Pinch of salt
Instructions
Step 1: Prepare the crust
Preheat oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 8 minutes, then set aside.
Step 2: Make the filling
In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, beating just until combined. Stir in sour cream, amaretto, almond and vanilla extracts, flour, and salt.
Step 3: Bake
Pour filling over crust. Bake for 55–60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool for 1 hour inside the oven.
Step 4: Chill
Refrigerate for at least 4 hours or overnight. This allows the flavors to deepen and the texture to set beautifully.
Step 5: Garnish & Serve
